First, place butter and olive oil in a skillet over medium heat.

Next add Onion and zucchini and cook until zucchini becomes slightly soft and onion turns translucent.

Now add tomato, thyme and lemon juice and salt and pepper – mix well and let sit for 2 minutes.

Then add spinach to the skillet, mix well and continue to mix for 3 minutes until spinach becomes soft.

Finally, top with a pinch of parmesan and it is ready to serve.

Ingredients

  • 1 medium onion diced
  • 1 large tomato cut into small pieces
  • 4 medium zucchini sliced and halved
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1.5 tablespoon thyme
  • 1 cup fresh spinach
  • 2 tablespoon Parmesan
  • Salt and pepper to taste

Instructions

    1. Place butter and olive oil in a skillet over medium heat

Notes

You are welcome to add your favourite protein to the dish, for some extra flavour. I have added some chicken slices to this for added protein.
