What is wonderful about my Weight Watchers Chicken Enchiladas is that it serves well as a quick, yet delicious dinner any night of the week. It has the perfect amount of spice to satisfy your cravings, yet low in points. With that being said, let’s get cooking!

WW Points for Chicken Enchiladas:

This recipe comes out to 6 points per serving. Keep in mind if you are concerned about point values you can always plug the info from your specific ingredients into the recipe creator and get them yourself. Different brands occasionally have different point values so it’s never a bad idea to check for yourself if you have concerns 🙂

Weight Watchers Chicken Enchiladas Recipe

You’ll need some simple ingredients for this recipe. Be sure to use these same amounts that you find in the recipe card at the bottom of the post when making Weight Watchers chicken enchiladas or it can potentially skew your points.

I always use the WW recipe creator to find the points but you should create the recipe using your specific brands and ingredients as well if you are concerned about the points!

You’ll need red enchilada sauce, precooked and shredded chicken breast, eight inch 100 calorie or low carb tortillas, and reduced fat Mexican shredded cheese blend. If you want to add some garnishes like reddish, cilantro, green onion, and lime juice, I highly recommend.

You can also top with things like sour cream or greek yogurt, salsa, etc. but make sure to add those points on extra based on what you use, they’re not included in the points calculations!

Weight Watchers Chicken Enchilada Recipe

Combine together the precooked shredded chicken and enchilada sauce in a sauce pan over low-medium heat and heat for 5 minutes.

Place 1/3 cup of chicken and enchilada sauce mixture in each tortilla, roll up and place seam down in an 8 x 12 non-stick cooking pan.

Use remaining enchilada sauce that is left in your pan and drizzle it on the top of your rolled up enchiladas.

Sprinkle cheese on top of all enchiladas, cover pan with tin foil and bake in the oven at 400 degrees for 20-25 minutes.

Top your Weight Watchers Chicken Enchiladas with diced radishes, cilantro and green onions. Squeeze lime juice on top for an extra zing of flavor!

Can I make these enchiladas dairy free and gluten free?

You can absolutely make dietary changes to this recipe. You can use corn tortillas if you like, or if you have a gluten free tortilla that you enjoy sub that in, just change the points based on your calculations on the WW app.

If you aren’t on WW it makes it really easy, you can swap in some vegan cheese without worrying about the points shifting. I like the CHAO creamy shreds from Field Roast! Around here we can get those at Giant grocery stores, they melt really well which is why I like them for enchiladas!

Ingredients

  • 15 oz red enchilada sauce
  • 2 cups of precooked and shredded chicken breast, a rotisserie works very well
  • 6 eight inch 100 calorie or low carbohydrate flour tortillas
  • 1 cup of reduced fat shredded Mexican mix cheese
  • garnishments include radishes, cilantro, green onion and lime juice (amount to your preferences)

Instructions

  1. Combine together the precooked shredded chicken and enchilada sauce in a sauce pan over low-medium heat and heat for 5 minutes.
