Weight Watchers Breakfast Sandwich Recipe

Here’s what you’ll need to make my favorite Weight Watchers breakfast sandwich:

This sandwich recipe has it all, homemade biscuits, bacon, eggs, cheese, and best of all…it’s healthy enough to enjoy on Weight Watchers! You can’t beat this bacon egg and cheese biscuit as a start to your day!

This recipe uses all purpose flour, non fat greek yogurt, salt and pepper to taste, eggs, bacon, and 2% American cheese slices. You can also add a bit of garlic powder or paprika for some extra flavor!

You’ll be amazed to find out that the biscuits are just self rising flour and greek yogurt. They’re super simple to make and it’s no coincidence. We’re looking for easy here because no one wants a complicated recipe even if it is a healthy one!

How to make breakfast sandwiches for Weight Watchers:

Preheat the oven to 400 degrees. Mix flour, salt, garlic powder and yogurt until there’s no crumbles left in the bottom of the bowl, sides of the bowl are mostly “clean” and the dough looks well combined.

Lay out dough on a floured surface. Pat out the dough until it’s about ½ inch thickness. Using a biscuit cutter (sprayed for non stick cooking spray) cut out 9 biscuits.

Spray a baking sheet with non stick cooking spray and lay biscuits 2 inches apart. Bake for 19-22 minutes or until golden brown on top.

While your biscuits are baking using a fork and a medium sized bowl, whisk together 7 eggs with a pinch of salt and a pinch of pepper (I like white pepper) . Spray a large skillet with non-stick cooking spray and cook eggs on low heat.

Cook until edges are done and then flip over. Continue cooking until eggs are done. You should be able to slide your cooked egg right out of the pan onto a flat, clean surface. Using your biscuit cutter, cut out 9 egg rounds and lay ½ slice of cheese on top.

Heat your pre cooked microwave as directed on the box and dab any extra bacon grease with paper towels once bacon is cooked and crispy.

Using a knife, cut the biscuit in half. Place a cheese topped egg round on the biscuit then one strip of bacon on top of that and sandwich together with the top of the biscuit.

Can I prep these in advance and freeze them?

If you like to meal prep for Weight Watchers you won’t want to skip this recipe. You can make all of these sandwiches in advance, wrap them in freezer paper and foil, and store them in a freezer bag until you are ready to use them.

I freeze mine fully assembled and then thaw them in the refrigerator overnight. In the morning I remove the foil, microwave for about 45 seconds and then I’m ready to go! Wrapping the sandwiches in both freezer paper and then foil means that you can microwave the sandwiches without having to wrap them in something else!

The double wrapping also protects against freezer burn but if you don’t want to do that you can always freeze them just in the foil and then wrap in a paper towel to microwave them.

Another thing I recommend is a good pan for baking the bacon and the biscuits. I line my half sheet pans with silicone baking mats which let everything bake to perfection without sticking! You can use parchment paper if you don’t have silicone baking mats!

  • 2 Cups Chobani greek, non fat plain yogurt
  • ½ tsp. Table salt
  • ½ tsp garlic powder
  • 7 Large Eggs
  • 9 Slices Kroger brand fully cooked bacon
  • 4.5 Slices of 2% milk American Cheese
