Can I make this easy taco soup family-friendly?

Not everyone likes spicy and I get that. You can make this recipe as spicy (or mild) as you’d like. You can use regular tomato juice and leave out the peppers if you’d like to dial it back a notch. Sub in green or red peppers if you’d like to keep the peppers but lose the heat.

To make this soup you’ll need:

  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 small diced onion
  • 1 pound of lean ground turkey (93/7)
  • 1 packet taco seasoning
  • 1 cup red salsa
  • 1/2 Cup diced green chilies
  • 4 Cups tomatoes, diced
  • 1 cup of spicy tomato juice
  • 2 cups chicken broth
  • 2 Cups kidney beans (15.5 oz can)
  • 2 Cups black beans (15.5 oz can)
  • 4 Cups Corn, canned or frozen
  • 1/2 cup fresh cilantro

I make a lot of Weight Watchers ground turkey recipes. This helps me keep my points low and my budget on track. Ground turkey is more budget friendly than beef where we live so it’s a nice bonus for eating healthier meals!

Do you have taco soup Crock Pot instructions?

You could make this taco soup in slow cookers by cooking the ground turkey and then placing all the ingredients into the crockpot for a few hours on low. I find that soups with beans do much better when you can give them a few hours on low versus lower hours on high.

I would want to make sure I cooked the ground turkey ahead of time for cooking in the Crockpot, other than that everything will be good to go once it’s warmed through.

Can I alter this recipe to be lower in points?

If the points are too high for you here are some ways to reduce those points: 

  • Use ground 99% fat free turkey breasts which would lower your points on the turkey. 
  • Skip the olive oil, you won’t miss it! 
  • If you are making this less spicy you won’t need the tomato juice which will drop a few points as well!

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 small diced onion
  • 1 pound of lean ground turkey (93/7)
  • 1 packet taco seasoning
  • 1 cup red salsa
  • 1/2 Cup diced green chilies
  • 4 Cups tomatoes, diced
  • 1 cup of spicy tomato juice
  • 2 cups chicken broth
  • 2 Cups kidney beans (15.5 oz can)
  • 2 Cups black beans (15.5 oz can)
  • 4 Cups Corn, canned or frozen
  • 1/2 cup fresh cilantro

Instructions

  1. Set your Instant Pot to the sauté function (Mine shows 30 when I turn this on.)
  2. Add the olive oil and allow to heat up.
  3. Add onions and garlic and cook 2-3 minutes or until garlic is fragrant and onions are translucent. Stir occasionally.
  4. Add ground turkey and cook until no longer pink. Turn Instant Pot off.
  5. Add chicken stock to Instant Pot.
  6. In a small bowl, add black and kidney beans and corn.
  7. Add tomato juice
  8. Add taco seasoning, salsa, tomatoes, and green chilies.
  9. Sprinkle cilantro on top.
  10. Mix everything together.
  11. Close and lock the lid on the Instant Pot and make sure the vent is closed. Set Instant Pot to 8 minutes. Once the 8 minutes are up, allow the pressure to release naturally for 10 minutes. Open the vent and release the remaining pressure.

  1. I’m on green plan. I entered this in the WW app. I got 12 cups of soup and it equaled 6 points. How do you figure 3 points?

    1. On green plan this recipe is 7 points as listed in the post! If you entered the ingredients you used to make it at home and portioned it out to your serving sizes and got 6 points on green that seems like it is probably correct to me though I can’t say for sure. Again, when I created the recipe with ingredients and brands I used this recipe was 7 points per serving on green plan.

  2. Just subscribe to your website. You have great recipes, but I have a question regarding this recipe. What are the points for the recipe if I use ground turkey? In your article you said that with beef it was 8 points but your printed recipe is with ground turkey and it has the same points as beef. So which is correct? Thanks

    1. Thank you. I updated the recipe to reflect the 93/7 ground turkey. Using beef would significantly increase points. The points – 3 Weight Watchers Freestyle Smart Points in each serving on Green and Blue. 7 Weight Watchers Freestyle Smart Points in each serving on Purple. I hope that helps. Best, Michele

  3. It looks good and easy to make which is a big plus to me. I am a senior citizen and I live alone. I am no longer onto making large meals, as I did when I had a family.
    I want to eat healthy, and I am looking for easy recipes these days.

    1. Saute ground turkey with olive oil, garlic and onion until cooked. Put in crockpot, add all other ingredients. Stir well and cook on low for 6 to 8 hours. High for 4 to 6 hours. Good luck!
