Why should I use an Instant Pot to make a Weight Watchers breakfast? 

If you haven’t started using an Instant Pot to save time, this is going to be a perfect option.  Using a simple pot in pot technique, you can have perfectly cooked egg casseroles in minutes.  No longer do you have to wait an hour for this to bake in the oven!

Instant Pot Weight Watchers Breakfast Casserole

There is often great debate about having bacon on Weight Watchers, but with the SmartPoints system, you can enjoy bacon every day!  This recipe includes 6 pieces of center cut bacon.  Make sure you use center cut to save points!  The bacon, cheese, eggs, peppers, and onions make this a recipe chock full of flavor.

Ingredients for this breakfast casserole with bacon: 

This is a great breakfast casserole with bacon. You can certainly make it with other breakfast meats but we love bacon so that’s what we decided to use. It’s also what we used when calculating the points for Weight Watchers so if you make changes make sure to recalculate! 

  • 6 eggs
  • 6 pieces center cut bacon, cooked and crumbled
  • 1 cup fat-free cheddar cheese, shredded
  • 1/2 red onion, diced
  • 1/2 bell peppers, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup water

Directions for making this breakfast casserole easy and quick: 

  1. In a large bowl, whisk together eggs, salt, black pepper, and garlic powder until well combined.
  2. Mix in bacon, cheese, onion, and peppers until well covered.
  3. Pour into already sprayed casserole dish (I use a small ceramic dish that is safe for oven use)
  4. Pour 1 cup water into the bottom of the Instant Pot Liner
  5. Create an aluminum foil sling, or use a trivet in the bottom of the liner.  Place bowl into the Instant Pot.
  6. Place lid on Instant Pot and set to seal.
  7. Choose the manual setting and set to 13 minutes.
  8. When the cooking cycle has completed, allow to NPR (natural pressure release) for 2 minutes.  Release remaining pressure and using silicone mitts remove the bowl from the Instant Pot liner.
  9. Serve.

Instant Pot Weight Watchers Breakfast Casserole

This easy brekafast casserole is made in the Instnat Pot. It's the perfect Weight Watchers brekfast casserole becuase it's low in points, flavorful, and keeps you full and focused all morning long!

  2. Do you need to add water to the bottom of the IP like most Ip recipes?

    1. Yes. Thank you for checking. Water is listed in the ingredient list and it’s noted to add it to the inner liner of pot.

  3. Can you just put it in the instant pot itself?

  4. What if you don’t have an instant pot? How long would you bake it in the oven?

    1. Good question. I’d bake at 350 degrees for 20 to 25 minutes or until eggs are set. Thanks for stopping by!

  7. Hi, I’m a new Instant Pot user (got one for my birthday), and I really want to make this recipe. I might need to increase the serving output to 6 or 8. I haven’t learned enough about adjusting cooking times for larger amounts. What would you suggest for this (assume I’m going to double this)?

  9. This looks delicious – one question though…you place the ceramic dish within the instant pot? i had no idea you could do that!

    1. Yes! As long as it is oven safe, it will most likely be safe for use in the Instant Pot.

  10. How did you figure only 2 sp for 1/4 serving?

    1/4 of 6 slices of bacon is 1.5 pieces of bacon, which is 2sp.

    1/4 of 1 cup of fat free cheese is 1/4 cup which is 1sp; or 1/4 of 1 cup of reduced fat cheese is 2 sp.

    Depending on the cheese, you’re looking at 3 or 4 sp for 1/4 of a serving.

    Can you please break it down?

    1. Center Cut Bacon is lower in points. 3 slices of center cut bacon is only 2 SmartPoints on Beyond the Scale, FreeStyle, or Flex Plans. 1 cup fat-free cheddar is 4 SmartPoints.

      6 slices of center cut bacon is only 4 SmartPoints. 1 cup of fat-free cheddar is only 4 SmartPoints. Dividing those 8 points by 4 servings is 2 SmartPoints per serving 🙂

  11. You had me at eggs. I have been thinking that I need an Instant Pot and this seals it! This recipe looks easy, doable, TASTY and needs to git in mah belly!
