Here’s what you’ll need to make healthy deviled eggs:

These great eggs are made with eggs, light mayonnaise, non-fat Greek yogurt, yellow mustard, sweet relish, pepper, and some paprika to top them off perfectly.

How to make Weight Watchers deviled eggs:

In a large pot, cover 8 eggs with water. Bring water to a boil. Once the water is boiling, cover with a lid, reduce heat to low/simmer, and allow to cook for 7 minutes.

In a medium sized bowl, add light mayo, mustard, relish and salt together. Set aside.

When eggs are ready remove from heat and allow to sit for another 2 minutes in the covered pot.

While you’re waiting for the extra 2 minutes, put ice and water in a large bowl. When the eggs are ready, place them in the ice water bath.

Once your eggs are cool enough to handle (just a minute or two), gently peel the eggs and slice lengthwise down the center of the egg.

Remove the yolks and place them into the bowl with mayo, yogurt, mustard, relish, and pepper.

Using a mixer, mix the ingredients until well combined and smooth in texture.

You can now spoon the mixture into the egg whites or place the mixture into a piping bag with a decorative icing tip.

Sprinkle with paprika and place in the fridge until ready to serve.

Ingredients

  • 8 eggs
  • 2 Tbsp. Light mayonnaise
  • 2 Tbsp plain fat free greek yogurt
  • 1 Tbsp yellow mustard
  • 1 Tbsp Sweet relish
  • 1/4 tsp pepper
  • paprika (enough to sprinkle on top)

Instructions

  1. In a large pot, cover 8 eggs with water. Bring water to a boil. Once the water is boiling, cover with a lid, reduce heat to low/simmer, and allow to cook for 7 minutes.
  2. In a medium sized bowl, add light mayo, mustard, relish, and pepper together. Set aside.
  3. When eggs are ready remove from heat and allow to sit for another 2 minutes in the covered pot.
  4. While you're waiting for the extra 2 minutes, put ice and water in a large bowl. When the eggs are ready, place them in the ice water bath.
  5. Once your eggs are cool enough to handle (just a minute or two), gently peel the eggs and slice lengthwise down the center of the egg.
  6. Remove yolks and place them into the bowl with mayo, yogurt, mustard, relish, and pepper.
  7. Using a mixer or fork, mix the ingredients until well combined and smooth in texture.
  8. You can now spoon the mixture into the egg whites or place the mixture into a piping bag with a decorative icing tip.
  9. Sprinkle with paprika and place in the fridge until ready to serve.
