Is this a gluten free dinner recipe?

As long as your seasoning mixes are gluten free you shouldn’t have any issues making this sweet potato chicken skillet naturally gluten free.

It’s a great recipe to make dairy free if you need it as well. It’s simple to just swap out the cheese for a vegan alternative that you like. Chao makes a good one that is available at Walmart (my store keeps it near the tofu)!

This sweet potato chicken skillet uses boneless skinless chicken breast, olive oil, onions, sweet potatoes, black beans, corn, green chilies, salsa, taco seasoning, oregano, garlic powder, salt/pepper, taco blend shredded cheese, and chopped parsley!

WW has definitely changed from 2020 to now. They went from three to one plan to multiple plans and back to one plan again. So in 2023, we have just plain old “POINTS.”

How to make a delicious sweet potato chicken skillet:

Add the oil to a skillet over medium high heat.

In a bowl, combine the taco seasoning, garlic powder, oregano and salt and pepper to taste.

Place the chicken into the skillet with ½ the seasoning mixture. Saute until cooked about halfway.

Mix the onions into the skillet, and saute until softened and the chicken is cooked through.

Add the sweet potatoes, corn, chilis, salsa and beans into the skillet along with the remaining seasoning. Stir to combine, and saute for another 5 minutes.

Remove the skillet from the heat, sprinkle with the cheese and allow it to melt before serving.

Can I have this recipe on Weight Watchers?

Weight Watchers newest program, Personal Points, caters a plan to each individual. Their plan is still relatively the same in that you can eat anything you like you just need to track it and stay without your points ranges for the day / week.

Now that the plan is different for each and every individual there’s not really a way for us to provide the points for you. We recommend that you use the recipe creator on the app or the website to create the recipe based on the ingredients / brands you use and then you’ll know for sure how to track this recipe for your Personal Points plan!

This easy sweet potato chicken skillet is a delicious and simple dinner recipe that everyone will love. A great weeknight meal to make, try out this sweet potato chicken recipe!

Ingredients

  • 1 ½ lb. Boneless skinless chicken breast cut into pieces
  • 2 Tbsp. Olive oil
  • 1 Onion chopped
  • 2 Sweet potatoes pre-boiled until crisp tender and cut into cubes
  • 1 Can black beans drained and rinsed
  • 1 C. Corn
  • 1 Can diced green chilis
  • ½ C. Salsa
  • 2 tsp. Taco seasoning
  • 1 tsp. Oregano
  • ½ tsp. Garlic powder
  • Salt and pepper to taste
  • 1 C. Taco blend cheese
  • Chopped parsley or cilantro for garnish

Instructions

  1. Add the oil to a skillet over medium high heat.
